    Thanks for an informative post, Messy. Now, if I followed the recipe correctly, Welsh Rarebit is: –

    Aperitif
    1/2 cup porter beer

    Main Course
    Cheese on Toast
    6 ounces (approximately 1 1/2 cups) shredded Cheddar
    4 slices toasted rye bread
    2 tablespoons unsalted butter

    Dessert
    3/4 cup heavy cream

    When visiting Welsh persons for the biggest meal of the year, expect the dining room (i.e. lounge) to be asparkle with seasonal fake-snow decorations in the form of: –

    2 tablespoons all-purpose flour

    Remember to gasp in genuine appreciation of the various condiments you’ll likely be offered by your backward hosts: –

    1 teaspoon Dijon mustard
    1 teaspoon Worcestershire sauce
    1/2 teaspoon kosher salt
    1/2 teaspoon freshly ground black pepper
    2 drops hot sauce
