This is good for people with Anger Management issues! 😉
What you do, is get a leg of Lamb and a small sharp knife, stab the leg all over to make small slits in the flesh.
Now crush or thinly slice some garlic, and push into the slits in the meat, then insert a small sprig of rosemary into the same slits, until the leg resembles a hedge hog.
Bake in the oven for about 20-30 per pound, and serve with roast potatoes and fresh veg.
Note forgeting the fresh garden mint sauce. 😀

Yes Tess.
All you do is add a little sugar to some mint while your chopping it up finely ( sugar brings out the juices ), put the mint in a container with some more sugar and vinegar.
Fresh Garden mint doesnt give you that strong mint flavour that you get with shop bought stuff, its a more subtle flavour.
March 9, 2007 at 2:40 pm #48125VicJamesonParticipantMint is fantastic stuff. Once it takes a hold in your garden it grows like a weed and you’ll never be without the stuff throughout a lot of the year. Any plant that you can walk past, pull off a leaf and chew it like a sweetie must be good. 😀
March 10, 2007 at 8:31 am #48126tessParticipantI might grow some in a pot, and then give it a go. Our neighbour used to have mint, the smell used to drive my goat wild – he was forever trying to get into her garden to eat the stuff 😆

feeling hungry now 8)

Even though you don’t like the thought of it.. please just once try it.
When you cook meat the more you cook it the more flavor you cook out of it.. Rare lamb is probably the best meat in the world.
Same goes for all meat btw….. More you cook it the more flavor you cook out of it.
* i was a chef for 6 years btw :P*
